This sidra variety fermented with mangosteen cultures was created special for us by julio madrid. the intention was to create a coffee that was elevated in flavor while still using a high-end varietal - in this case, Sidra. the culturing process is AN EXPERIMENTAL AND “WILD” FERMENTATION IN WHICH CUSTOM CREATED CULTURES, YEASTS & MICROBES INTERACT WITH THE COFFEES FERMENTATION IN A VERY WELL THOUGHT OUT & SPECIFIC WAY. HEAT, PH & OTHER FACTORS & CONSTANTLY MONITORED TO ENSURE A PERFECT PROCESS.
